Easy Rainbow Cupcakes

If you haven’t noticed I’m a lover of all things CAKE. Cupcakes, normal cakes, if there’s cake involved, I’m there!

Today I wanted to try my hand at rainbow cupcakes and see what I could do. I’ve seen many different ways on how to make them but most of them involved baking a sheet cake with 5 different layers, freezing the cake overnight, then using some type of cutter to cut them out. In my mind- too much work. I had about 2 hours to spare and didn’t want to spend all my time in the kitchen.

I thought why not make actual cupcakes, and just layer the colored batter in the liners themselves? I hadn’t seen this done so I thought, why not, it’s worth a try. Plus, who doesn’t like bright and colorful cupcakes??


  • 1 Box Vanilla Cake Mix
  • 1 Tub of Vanilla Frosting
  • Sprinkles to decorate with


  • Mix batter according to directions on cake box
  • Divide batter into however many colors you want and put into separate bowls (I decided on 5 colors- pink, yellow, green, teal, and purple)
  • Color batter with either food coloring drops or gel (just to note, you need a lot less gel because it’s much more concentrated than you do with drops)
  • Make sure the batter is nice and bright, if it’s not the cake colors will be dull
  • Spoon equal amounts of batter into cupcake tin (Example- I put a spoonful of purple into all the liners, next was blue, then green, keep layering until you get to your final color)
  • Bake cupcakes according to directions on box
  • Let cupcakes cool and then ice them
  • Eat and enjoy your gorgeous creation!

Since I didn’t want to eat the entire dozen, I saved a couple for myself and sent them to my neighbor who has 5 kids, she said the kids loved them and they were a total hit.  Then again, my husband said, “Really Linds, what kid doesn’t like cupcakes?” I guess he makes a valid point :)
