If there’s one thing I LOVE baking with it’s FRESH ingredients. So when our friend gave me some of his key limes from his key lime tree I was stoked. At the time, I wasn’t sure what to make since there are so many yummy things you can make with key limes. After much deliberation, I decided on some bite sized key lime shortbread cookies. The cookies are deliciously soft and melt in your mouth and the key lime icing adds that extra bit of tart flavor.
You can find the recipe here. Two things to note: I only chilled my dough for one hour and then I rolled the dough into bite sizes balls and flattened them out with my hands. For my icing, I had a slight variation as well; I only used 1 cup of powdered sugar and 2 tablespoons of key lime juice.
