Happy Halloween! Surprisingly, this post isn’t ghoul-related in the least but with all this rainy, cold weather, I wanted to bake a cake (and my husband’s been requesting this type of cake for some time now) that reminded me of the South. Something tasty, with that down home feel. So what did I make? None other than Paula Deen’s Coconut Cake! Before you ask, yes, it has butter (2 sticks) and yes, there’s sugar (2 cups) –but who cares! We just survived Frankenstorm! Plus, it wouldn’t be the Paula Deen way without those two ingredients, now would it?
We are HUGE coconut lovers, so this cake was right up our ally. First off, this cake is huge! It’s a 3-layer, 9-inch round cake that’s absolutely delicious! This cake is infused with a glorious coconut flavor (from the coconut milk) and the filling actually seeps into the cake (you’ll poke holes into the cake) so it makes the cake nice and moist. The frosting is that light, 7-minute frosting and of course is topped with the star of this show- coconut
I’m so glad I found this recipe because it’s now going to be our go-to coconut cake.
